The weekend after New Years was really cold here, typical but still uncomfortable. I was talking on the phone with J and she said they were actually making two soups that weekend and it sounded like a GREAT idea. So I headed to my trusty recipe resource: Cooking Light. I found a recipe for Spiced Coconut-Red Lentil Soup from Cooking Light (Oct 2008). The soup was GREAT and relatively easy to make as long as you have all of the ingredients.
